Southwest Quinoa Salad

Ingredients

  • One cup dry quinoa
  • One cup black beans
  • One cup corn-frozen and thawed or cut off the cob
  • One medium baked sweet potato, cooled and diced
  • Handful of grape or cherry tomatoes, cut in half
  • One diced yellow and/or orange pepper
  • 1/2 cup chopped cilantro
  • 1/2 cup pine nuts of pumpkin seeds
  • One avocado, diced and added at the end
  • 1/2  cup chopped mango
  • Dressing:
  • Juice of two limes(or more to taste)
  • 1/2-1/3 cup olive oil
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon or more of pepper
  • dash or two of cayenne

Instructions

  1. Cook quinoa in 2 cups water for 20 minutes. Cool
  2. Chop vegetables and add to quinoa
  3. Make dressing and add to remaining ingredients
  4. Sprinkle with cayenne
