Raw Avocado Soup

Ingredients

  • 1 cucumber peeled
  • 1 cucumber unpeeled
  • 1/3 cup fresh herbs(sage, rosemary, oregano, thyme, tarragon and basil-any combination of those)
  • 1/3 cup fresh cilantro, chopped
  • 1/3 cup fresh mint, chopped
  • 1/3 cup fresh parsey, chopped
  • 1/4 cup garlic, with peel
  • 1 tablespoon ginger, with peel
  • 1 1/2 teaspoon jalapeño
  • 1/4 cup Nama Shoyu or 2 teaspoons celtic sea salt
  • 1/3 cup olive oil
  • 3/4 cups fresh-squeezed lemon juice
  • 4 cups fresh-squeezed orange juice
  • 4 avocados, peeled and seeded
  • 4 whole tomatillos, remove papery husks

Instructions

  1. To make this soup hearty, chop up the unpeeled cucumber, 1 tomatillo, 1 avocado, and anything else you have on hand (such as red bell pepper) and divide evenly among bowls.
  2. In a blender combine the rest of ingredients and blend well.
  3. Pour into bowl over chopped vegetables. Or you can just blend all ingredients minus the unpeeled cucumber, 1 tomatillo and 1 avocado.

Notes

I garnished this with plain yogurt for guests (to keep it totally raw, I’d make a raw yogurt/cheese) and topped that with finely chopped avocado, red bell pepper, and chives) Beautiful and yummy!!
