Middle Eastern Cauliflower “Tabbouleh”

Ingredients

  • 1/2 head of cauliflower
  • 1 cucumber
  • 1 red onion
  • 1/2 cup cashews
  • 3/4 cup dried apricots
  • 1 cup cherry tomatoes
  • 1/2 cup olive oil
  • 2 Tablespoons lemon juice
  • 1 handful of chopped mint
  • 1 handful of chopped parsley
  • 1 handful of chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Put the cauliflower in a food processor and blend until finely chopped. Dice the cucumber, onion, cashews, and apricots. Slice the tomatoes into half. Mix all the ingredients together in a bowl.
  2. Mix olive oil and lemon together and toss with vegetables along with fresh herbs, salt and pepper to taste.

Notes

This is very similar to the classic bulgur salad.
