Mock Tuna Salad

Ingredients

  • 4 cups sunflower seeds, soaked for 8 hours or overnight
  • 6 celery stalks, finely diced
  • 1/2 red onion, finely diced
  • 1/2 red bell pepper, finely diced
  • 1/2 bunch parsley, rough chop
  • 1/2 bunch dill, finely chopped
  • 2 teaspoons tahini
  • 4 garlic cloves
  • 1/4 cup dulse flakes
  • 1 1/2 cup lemon juice
  • 1 cup filtered water
  • 2 teaspoons sea salt and black pepper

Instructions

  1. Prep the veggies and mix well.
  2. Toss in the sea salt, pepper and dulse.
  3. Drain sunflower seeds and rinse; grind seeds in a food processor with tahini and garlic. While processing add lemon juice and water through the top.
  4. Combine with the veggies and remaining, mix well.
  5. Stuff collards, tomatoes, or your favorite veggie.

Notes

This is high in protein. Dulse, a seaweed from the Atlantic and Pacific oceans, is used to strengthen the blood, adrenals and kidneys. It is a superior source of iron, iodine and a high source of B12. A great alternative to tuna and completely vegan and raw! It will keep in the refrigerator for approximately 4 days
